Easy Lemon Blueberry Tarts

These luscious little tarts are so easy to make!
It's a great way to enjoy fresh blueberries in the summer months.

 This would be a fun dessert for you and the kiddos to put together.  
They look fancy, but are really simple and fast.


Here's what you need:

1 frozen pie crust
1 jar of lemon curd, room temperature
1 box of instant lemon pudding
2 cups milk
1 carton of heavy whipping cream
1 tsp vanilla extract
1 T. sugar
fresh blueberries
powdered sugar
cinnamon and sugar for garnish

**I used little tart pans for making the mini pie crusts.  
I purchased mine from a local fine kitchen goods store, but you could probably find them at any place that would sell kitchenware like a Bed Bath and Beyond or other similar store.**

Allow pie crust to come to room temperature and roll out flat.
I used the tart pan to cut out the pie rounds, and gently pushed the crust up the sides of tart pan.
Using a fork, prick the bottom of the crust several times before baking.


Make your lemon pudding according to package directions, and put in fridge to set while you are baking and cooling crusts.

In a 400 degree oven, bake the tart crusts for 10-12 minutes until golden brown.

Allow to cool and then gently pop out the crust.  
The tart pans I used had a removable bottom, similar to a cheesecake pan.

Spread a thin layer of lemon curd on the bottom of each tart. 
 It's easier to spread if it's at room temperature.


Pour heavy whipping cream into a mixing bowl, and add vanilla extract and the tablespoon of sugar.
Mix on high speed until light and fluffy.
Take one cup of the whipping cream and fold into the lemon pudding.

Spread a small dollop of lemon cream onto the top of the lemon curd.
Using fresh blueberries, dot the top of each tart with as many berries as you like.


I used some of the extra pie crust to make little cinnamon sugar heart shaped cookies as a garnish.
Just cut out, sprinkle with cinnamon and and a small amount of sugar and bake.

Sprinkle each tart with a fine layer of powdered sugar, and serve!
You could even use some of your leftover whipped cream if you like.
So delicious and simple.

Makes 4 tarts.
