Foodie Friday: Jerk Chicken

Oh, how I love this recipe!! It is so yummy- anytime of year, but especially on a hot summer day.  Charbroiled, some fresh pineapple and a tasty beverage.  Ya mon!

When you see the list of spices in this recipe, you will know why it is so flavorful and good.
I sometimes put together a quick batch of white rice- instant, cooked with half the water and half coconut milk.  Toss in some diced red pepper, and you will thank me!  ;)
We grilled some pineapple slices for this recipe.  Also amazing as a side dish to the chicken.


Jerk Chicken

1 tsp grated lime rind
1/4 cup fresh lime juice
1 T ground allspice
1 T brown sugar
1-2 T finely chopped jalapeno pepper
2 T olive oil
1 tsp sea salt
1 tsp coarsely ground black pepper
1 tsp dried thyme
1 tsp ground cinnamon
1/2 tsp ground nutmeg
3 garlic cloves, chopped

1/2 cup chopped onion

6 chicken breasts or 10-12 tenderloins
cooking spray
lime slices (optional)

Combine first 12 ingredients in a blender; process until well blended.  Pour mixture into a large heavy duty Ziploc bag; add onion and chicken.  Seal bag; marinate in refrigerator 1-2 hours, turning bag occasionally.

Prepare grill.  Remove chicken from bag, discard marinade.  Place chicken on grill rack coated with cooking spray.  Grill chicken, covered, 5 minutes on each side or until done. Garnish with lime slices. 

This recipe was originally featured in Cooking Light magazine.  It is a very diet friendly, flavorful main dish.
