Foodie Friday: ultimate strawberry cupcakes

I found this recipe last summer after I'd done some serious searching for a true strawberry flavor cake.
I found this on my favorite online recipe source, Allrecipes.com
It's simply called Strawberry Cake and Frosting, but it needed a better name, so I gave it one!

Not too sweet, but amazing strawberry flavor.  The frosting is heavenly. Super creamy, bits of real strawberries- you will want to eat it right out of the bowl.  But save some for the cake!  ;)
Perfect for Valentine's Day!

Ultimate Strawberry Cupcakes

1 package yellow cake mix
1 small box of strawberry flavor Jello
3T all purpose flour
1/2 cup water
2/3 cup vegetable oil
4 eggs
1 10 oz package frozen strawberries, thawed
1/2 cup butter- room temperature
4 3/4 cups powdered sugar

Preheat oven to 350 degrees.  Line muffin tin with baking cup liners.  In a large bowl, stir together cake mix, gelatin, and flour.  Make a well in the center and pour in water, oil, and eggs.  Stir in half of the thawed strawberries.  Beat on low speed until blended.  Scrape bowl and beat 4 minutes on medium speed.  Pour batter into cupcake liners. Bake in oven for 18-23 min. 
(Check to see doneness by inserting toothpick into center of cupcake- if it comes out clean, they are done.)
Allow to cool.

 strawberry frosting:
In large bowl combine butter, powdered sugar and the remaining half of the strawberries.  Beat on high speed until creamy.

I added the fresh strawberry slices on top- with a little notch out of the center to look more like a ♥.

The cupcake liners are Wilton- purchased from JoAnn's.

I added in my valentine pin that a friend made me several years ago- vintage embellishments and a cute little golden cupid.

...And since I was good today and already went to my yoga class, I rewarded myself with a cupcake for all the hard work in this photo shoot.


Yum.

  2. These are so pretty! I love when you share recipes. Anything strawberry is my favorite dessert...I strategically put the ad for chocolate covered strawberries from our local candy company in with my partner's mail... I am reallllly hoping he gets the hint! lol
